I drove twenty miles to eat this.

The Halibut Sandwich, at the iconic Maddox Drive In.

The halibut sandwich from Charlie’s Rolling Bistro at Ogden Music Festival 2021.

I saw my friend Christina eating it at Ogden Music Festival and ran over to grab one for myself—it looked amazing and you don’t see fried fish sandwiches often. That was two weeks ago.

I had to have it again, and I’d heard Charlie's Rolling Bistro food truck, where I got it, is actually from a locally famous family restaurant up north.

Family independently owned and operated for over 70 years!

I wasn’t expecting what I drove up to. At all. Fifty cars! About thirty in the drive-in car hop service - just like “Happy Days.” And another ten or so in the Take Out Cabin line.

They also have a house made veggie burger! Before vegetarians ruled the world (just kidding, but I wish they did).

My new “bestie” Mary who works at the amazing Brigham City Museum of Art & History, says the salads have delicious, locally grown tomatoes. And FRESH PEACH PIE from Brigham City’s famous peaches—“a peach to pie pipeline” she called it.

AND…homemade root beer on draft!

It all started with fried chicken. Perry, Utah, 1949.

I don’t know how the KFC up the road stays in business.

Another thing Mary said while on my Brigham City Museum of Art & History tour is that Brigham Young’s ZCMI was inspired by Brigham City because the community was one big badass collective!

Driving down the 89 I can see why. Produce after produce stand, quaint little cafes and restaurants—saw one called Rusted Spoon. A market stand called Grammy's. It’s “produce row,” Mary Ann said.

How did I not know this?!!!

Go get ya down fried chicken and a basket of fresh Brigham peaches this weekend!

And stop by the Brigham City Museum of Art & History!
